RECIPE: Toasted Cauliflower & Herb Bread (Gluten & Grain Free)

If someone were to ask me to summarise my entire professional career into 1 mission statement it would probably come down to finding endlessly inventive ways to encourage everyone to eat more vegetables.

An endeavour I am pretty happy to put significant quantities of effort into. Not least because I adore vegetables & am more than delighted to eat both the successes & failures of such experimentation.

(This 1 was definitely a success though)

RECIPE: Kuku Sabzi with Dulse, Walnuts & Figs

Kuku what now? Is this what we’re calling Phoebe’s final loss of grip on reality?

Well no, in actual fact this fabulously lyrical wordy double act is the traditional name for a baked Iranian omelette bursting with herbs, spices & general wonder.

Now in its original form this is a beauty of a prep ahead dish, but with my little spin it then comes with a couple of additional layers of nutritious joy & significantly less effort. Good things all round.

RECIPE: No-Fry Mediterranean Fritters

I absolutely love anything that resembles a pancake but I have always been more of a savoury stack supporter as opposed to a lemon & sugar kinda gal, offer me a galette & there will be mushrooms inside rather than chocolate every time!

These little beauties occurred after I was asked to create a recipe using a new sweet potato rice product & rather than go down the road of a risotto variation I thought this would be a fun breakfast/brunch idea. The flavour is sensational & as I mention in the title I have also managed to create that wonderfully characteristic fritter texture but sans deep or even shallow frying.

RECIPE: Salsa Verde Baked Cod With Cauliflower & Potato Mash

I love nothing more than to cook for others but what on Earth is the point of inviting people over to share a meal with you if you then spend the majority of the evening locked in the kitchen whilst your guests entertain themselves…

Luckily this recipe is not 1 that will shackle you to the stove, half can be prepped ahead of time & the rest is a case of ‘throw it all on a tray, put that in the oven & then present it as if it took you all day….’

RECIPE: Cacao & Coconut Semifreddo

I don’t have an exceptionally sweet tooth, I never have, but also the lack of overly sugary foods in my diet has meant my urge for sweets is more than satisfied by things like beautifully ripe fruit, maybe a dried date or fig on occasion, or I even find sweetness in wonderfully creamy coconut, cinnamon & other natural delights.

And that’s something pretty cool to note actually, if allowed to our tastes will adapt relatively speedily so if you find you have a real sweet tooth try making some simple swaps over a week or so then go back to your real sugar fixes & see how you find them.

One of the biggest issues we face in our modern world is food waste, & one of my most favourite things to do is to turn something that could’ve been trash into treasure.

Enter stage right these brunch beauties made from the humble cauliflower leaf. If you’ve never just roasted a cauliflower leaf then firstly you must do that, & then you must make these.
