Almond & Ginger Banana Bread

Ingredients

  • 4 ripe medium bananas + 1 small one for the top
  • 1.5 cups ground oats
  • 1/2 cup ground almonds
  • 1/2 cup hulled hemp seeds
  • 2 eggs or 2 flax eggs
  • 1 heaped teaspoon each cinnamon & ground ginger
  • 3/4 cup chopped almonds
  • 1/4 cup chopped stem ginger pieces
  • 1.5 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda

Preparation

Preheat your oven to 180°C.

Mash the 4 bananas with the eggs/flax eggs to a rough paste. Fold through the rest of the ingredients keeping some ginger pieces for the top.

Decant into a loaf tin, top with the sliced decorative banana & some extra ginger pieces & bake in the centre of the oven for 25-30 minutes until an inserted knife comes out clean.
