I never compromise on enjoyment, a truly healthy life is one that twins this with being therapeutically supportive of our health & wellbeing. The trick is to make sure we’re balancing our food groups by using real ingredients & consciously supporting our blood sugar, energy, sleep, stress & gut healthy, as these all determine whether our body is metabolically efficient or not. If it is, we receive the correct satiety signals, our hormones are in balance & we bounce like spring day to day.
I’ll just conclude by saying that anyone who tells you to stick to broccoli, brown rice & bland chicken to be well needs to stop being so joy sapping & come make these matcha & blueberry stuffed cookies with me & smile more.
Preheat your oven to 175°C.
Mix everything except the jam to form a dough, roll into tablespoon sized balls & then flatten in your hand to a disc, add a dollop of jam & roughly fold the edges up. Pop in a tray & gently flatten a bit.
Bake in the centre of the oven for 12-14 minutes until golden, cool on the tray for 5 minutes then transfer to a wire rack to go cold.
Use within 4 days or freeze for up to 3 months.
