This Breakfast Crumble makes for a deliciously warming start to wintry mornings, keeping blood sugar in check right through to lunch.

Ingredients

  • 3 medium apples
  • 2 oranges
  • 1 lemon
  • 35g jumbo oats
  • 1 1/2 tablespoons nut butter
  • 1/2-1 teaspoon cinnamon
  • 1 heaped tablespoon whole flaxseed
  • 1 teaspoon chia seeds
  • 2 tablespoons chopped nuts
  • 1 sachet Motion Nutrition protein powder
  • 1 egg or 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons warm water & left to sit for 5 minutes)
  • Pinch of salt

Preparation

Preheat your oven to 190C & grab a small brownie tin/ceramic baking dish.

Halve, core & finely slice the apples. Add to a bowl with the juice of 1 orange & the lemon, toss & leave to sit.

Mix the dry ingredients together for the topping, whisk the egg/flax egg, nut butter & juice of the other orange together then mix into the dry ingredients to create a sticky dough.

Layer the apples in the dish, pour over the juice from the bowl & then top with your crumble mix (use your hands to squish it into flattened pieces then place over the apples)

Pop onto a tray (in case the juices overflow a bit)& bake for 30 minutes until golden. Serve with yoghurt & a sprinkle of seeds or cacao nibs.
