Sweet foods aren't actually bad for us. What we have is an issue where our ability to appreciate naturally sweet foods has been distorted.

Sugar is the easiest form of energy, our brains love it! So if it's an option we will naturally pick it over all other things.

As food production has evolved this natural preference has been honed in on & exploited to drive sales. We buy products packed with added sugars &/or sweeteners, & suddenly we can't get enough of them or tell how sweet things like fruit, veg, nuts, seeds, coconut & cinnamon are.

However, with 7 days of effort, your taste can reset. And then we can get back to enjoying naturally delightful & nourishing sweetness as in this wonderful recipe.

Ingredients

  • 3 cups jumbo oats
  • 1.5 teaspoon baking powder & 1/2 tsp bicarbonate of soda
  • 1/4 teaspoon salt
  • 3 ripe bananas & an optional extra 1 for the top
  • 1 tablespoon melted coconut oil, butter or ghee
  • 2 small apples
  • 1 large carrot
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon cinnamon
  • 1 cup walnut pieces
  • 2 organic eggs

Preparation

Preheat your oven to 175°C. Grease & line a loaf tin with baking parchment.

Place your oats into a blender & process until they’re a flour. Add to a bowl with the baking powder, bicarbonate of soda, walnuts, salt & cinnamon. Stir & set aside.

Mash the bananas to a purée, whisk with the coconut oil & eggs. Coarsely grate apples & carrots then mix in.

Add dry to wet ingredients & fold together then transfer to your tin.

Bake for 35-40 minutes until an inserted knife comes out clean. Cool for at least 5 minutes before slicing.

Will keep in the fridge for 4 days or freeze for up to 3 months
