A super speedy, minimal cook meal for any time of day. Feel free to substitute with what you have in the fridge.
DRESSING
Preheat your oven to 200°C.
Butterfly your chicken; use a sharp knife to score down it's centre then create two flaps so you can open it up like a book. Squish it flat, season & press into a hot frying pan to crisp both sides.
Transfer to your baking sheet.
Cut the bread into cubes, slice the courgette into chunks, & toss in the oil. Add these to the tray & roast everything for 12 minutes.
Meanwhile, blend the dressing until smooth, add the lettuce & celery to a bowl. Chop your eggs & avocado into chunks.
Add the cooked elements when ready, toss, add the eggs, avocado, parmesan & enjoy!
