Ingredients
2 large red apples (350 g) cut into small chunks with the skin
1 cup (100g ) ground almonds
1 cup (100g) chestnut flour
1 teaspoon baking powder
1/4 cup (60 ml) extra virgin olive or avocado oil
zest from 1 orange
1 teaspoon vanilla bean paste
2 organic eggs
Flaked almonds (optional) to sprinkle on the top
Preparation

Preheat your oven to 160 C.

Combine chestnut flour, almonds, baking powder, oil, vanilla & eggs, beating until well combined. Then fold in the chopped apples.

Line a loaf tin or 20cm round cake tin with parchment paper (or use a silicone version that doesn’t need lining).

Transfer the cake mixture to your chosen tin, making sure the apples are well encapsulated in the mix & not clumped together or you’ll get a wet patch.

Garnish with flaked almonds if you wish.

Bake for 60 – 75 minutes in the centre of your oven – check after 45 minutes as depending on the size & shape of your tin you might need to bake it for less time/rotate the pan.

Rest in the tin for 15 minutes before removing & letting it cool on a wire rack. This will be somewhat a cross between a sponge pudding & a cake depending on how warm it is when you decide to serve.
