Chicken With Olives, Dates & Capers

Olives, dates & capers? Yes please! One of my favourite recipes, this super simple one-pot chicken dish is bursting with flavour and requires virtually no effort at all.

Ingredients
4 chicken thighs with drumsticks (skin on) – I get mine from Swaledale (use NATNOURISH for a discount)
6 medjool dates
1 cup large green olives
For the marinade
Juice of 1 lemon
2 grated/crushed garlic cloves
2 tablespoons capers
1 1/2 tablespoons avocado or olive oil
2 tablespoons white wine vinegar
3 sprigs fresh thyme
Plenty of black pepper
Preparation

Mix the marinade ingredients together & toss the chicken in it. Leave to sit for 30 minutes to 2 hours.

Preheat your oven to 180C, take a deep casserole dish & add the chicken & sauce before roughly chopping the dates & olives & mixing through. Bake for 35 minutes covered then 15 minutes uncovered until golden & crisp.

Serve accompanied by crisp lettuce tossed with peas, a squeeze of lemon, drizzle of tahini & sprinkle of nigella seeds.
