Cocktail Christmas Cookies

High protein, healthy fat rich, cocktail Christmas cookies with nuts, chocolate, and ground almonds.

Every year I make a version of these cookies. They’re insanely simple, everyone loves them & still very much manage to be a protein & healthy fat rich choice as opposed to a sugar bomb.

Recipe makes 6-8 cookies.

Ingredients

  • 1 cup almond or sunflower seed butter
  • 1/4 cup Campari
  • 1 tablespoon Vermouth
  • 1 tablespoon orange zest
  • 1/4 cup honey
  • 1.5 cups ground almonds
  • 2 tablespoons of protein powder or chestnut flour
  • 1 egg
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 cup of maple, ginger & orange nuts & seeds (I get mine from Boundless)
  • 35g Ombar chocolate

Preparation

Preheat your oven to 170°C.

Whisk your Campari, Vermouth, egg & honey together then blend into the nut/seed butter. Add the orange zest then fold through your dry ingredients.

Pinch off tablespoon sized pieces, roll into balls & arrange with space between them on a lined baking tray. Bake for 8-10 minutes in the centre of the oven.

Leave to cool for 10 minutes on the tray before transferring to a wire rack to cool.

Melt the chocolate, drizzle with abandon & sprinkle over the extra nuts & seeds.

Use within 5 days or freeze for up to 3 months.
