Is there any combination more synonymous with Sunday brunching than the holy trinity of eggs, avocado, & salmon?
Preheat your oven to 200°C, line a tray with a silicone mat.
Add your courgette noodles to a dry pan, heat, tossing occasionally, for 3-4 minutes until the water has evaporated off.
Use tongs to create 2 large nests on your lined tray, crack an egg into the centre of each & bake for 8-10 minutes until the eggs are done.
Transfer to plates with your salmon & avocado, add lemon, season & serve!
