Often people tell me that tofu is bland or boring, then a few more will tell me it’s just not something they ever eat. All valid points however, I believe that we totally underestimate this hugely convenient, super cost effective protein & mineral source.
If you know how to use it properly then that potential 'blandness' converts into tofu being the most incredible flavour sponge. This beauty is a brilliant alternative to a pulse based dip, makes a superb sauce & if you're feeling a touch peckish then do join me in grabbing a spoon & diving on in!
Add all the ingredients to a blender. Transfer to a bowl & serve with your choice of side.
