Ingredients

  • 2 large bunches of parsley, or 1 of parsley & 1 of coriander
  • Leaves from from 3 rosemary stalks
  • 1 teaspoon fennel seeds
  • 1/3 - 1/2 cup extra virgin olive oil
  • Pinch of salt

Preparation

Place everything except the oil into a food processor. Blitz to chop.

Then with the motor running, add in the oil slowly until you have a spreadable sauce.

Decant into a jar and use within one week, or freeze in an ice cube tray for up to 3 months.

Contact with hot food is fine but try not to actively heat this.
