I’m all for being able to enjoy the foods we enjoy but without perturbing our body’s natural function.

Isolated or added sugars like in a conserve/preserve/jelly/marmalade just aren’t good for long term health, however this version uses whole fruit, chia seeds, & grass fed gelatine so you get all that added fibre and protein.

Ingredients

  • 2 cups mixed frozen berries
  • 2 apples
  • 2 clementines
  • 1 orange
  • 3 tbsp chia seeds
  • 1.5 tablespoon gelatine (Ossa Organic)

Preparation

01

Add the berries, cored & quartered apples (keep the skins on) with the peeled & segmented orange to a pan with 2 cups water. Bring to a simmer & cooked covered for 10 minutes.

02

Mash the fruit together with a spoon & add the chia. Stir well & pop the lid back on. Simmer for another 8-10 minutes, stirring occasionally.

03

Pour into a blender, add the gelatine & blitz until totally smooth. I like to decant it all into a larger container to let it begin to cool, then decant into individual jars when warm rather than boiling.

04

Fill the jars to the top to create a good seal with the lid. Let them cool in the fridge & they’ll set into a spreadable jam!
