A delicious spin on the tuna melt but much higher in protein, more optimal in terms of fat balance, & a sensational way to sneak in more of those omega 3 rich oily fish. Salmon or tuna also work, please be sure to choose wild tinned fish such as the Fish4Ever or wild Atlantic products, & even mix tuna + mackerel together to gradually phase from larger to small species.

Ingredients

  • 2 thick slices of your favourite bread
  • 1/2 cup greek yoghurt or cottage cheese
  • 200g tinned mackerel in spring water
  • 40g grated strong cheese (mature cheddar, hard goat cheese, vegan alternative)
  • 2 tablespoons nutritional yeast
  • 2 large spring onions, finely chopped
  • 1 big handful cavolo nero, finely shredded
  • Pinch salt, plenty of black pepper
  • 1/2 teaspoon garlic powder (optional)

Preparation

Preheat your oven to 190C, if you have a combined grill & fan oven then use this.

Mix together all the topping ingredients, give everything a good mash to combine & check the seasoning is to your taste, adjust if needs be. This filling is also amazing in a jacket potato.

Lightly toast your bread, this will keep it from going soggy.

Then top with plentiful mounds of your amazing topping & pop into the oven/under the grill for 10-12 minutes (in the middle of the oven, not too high) until warm all the way through & slightly crisp on the top.

Drizzle with sriracha & enjoy!
