Classic Vinaigrette

This is the most basic of all dressings and is sometimes know as ‘French dressing’ or simply ‘Oil & Vinegar’. The beauty of this lies in really good quality ingredients – choose an organic, cold pressed, extra virgin olive oil (the one in the photo is my current favourite) to pair with a slightly sweet yet tangy vinegar such as apple cider, white/red wine or sherry vinegar. Alternatively use half lemon juice and half vinegar for a fresher, more summery zing. The addition of chopped fresh herbs or finely diced red onion are just a couple of examples of how you can personalise this basic beauty.

3 parts of your delicious extra virgin olive oil
1 part of your chosen vinegar
few good grinds of black pepper
Optional: fresh chopped herbs, wholegrain mustard, finely diced onion, lemon juice etc
