RECIPE: Courgette & Coconut Porridge

    • 1/4 cup pinhead oats
    • 1 tsp porridge oats
    • 1 tsp chia seeds
    • 1/2 courgette
    • 3/4 cup dairy free milk of choice (I use a combination of hemp & almond)
    • 1/2 tbsp pumpkin seeds
    • 2 brazil nuts
    • 1 1/2 tbsp raw coconut chips
    • 1 tsp ground flaxseed

     

    1. Place the pinhead & porridge oats in a bowl with 1/2 cup water, cover and leave to soak overnight.
    2. In the morning grate your courgette and add to a small pan with the soaked oats and chia seeds, stir well and leave to sit for a 5 minutes for the chia to absorb the fluid. Stir again.
    3. Add your milk(s) pumpkin seeds and sliced brazil nuts. Slowly bring to a gentle simmer and cook, stirring frequently, until deliciously creamy and unctuous. As the oats have been soaked this should only take about 5-6 minutes.
    4. Turn off the heat, mix through your coconut chips and top with your ground flaxseed.
    5. Enjoy then go about your morning with the plant based power of an Energizer bunny! 🙂
