Courgette & Coconut Porridge

Ingredients
1/4 cup pinhead oats
1 tsp porridge oats
1 tsp chia seeds
1/2 courgette
3/4 cup dairy free milk of choice (I use a combination of hemp & almond)
1/2 tbsp pumpkin seeds
1 1/2 tbsp raw coconut chips
1 tsp ground flaxseed
Preparation

Place the pinhead & porridge oats in a bowl with 1/2 cup water, cover and leave to soak overnight.

In the morning grate your courgette and add to a small pan with the soaked oats and chia seeds, stir well and leave to sit for a 5 minutes for the chia to absorb the fluid. Stir again.

Add your milk(s), pumpkin seeds and sliced brazil nuts. Slowly bring to a gentle simmer and cook, stirring frequently, until deliciously creamy and unctuous. As the oats have been soaked this should only take about 5-6 minutes.

Turn off the heat, mix through your coconut chips and top with your ground flaxseed.
