In recent years our passion for nut & seed butters has grown exponentially & for jolly good reason as they are absolute powerhouses when it comes to nutrition.
Now all will provide varying levels of plant based protein & fantastic unsaturated fats but the micronutrients within them will range slightly more, & that is why today I am shining a light on this gorgeously green spoonful in particular.
Zinc is a mineral we need in good quantities at all times. It acts as a vital co-factor for numerous metabolic processes within the body, hence our ongoing necessity for it. However at this time of year as we head into the harsher climes of winter our requirement increases as we also use a great amount of zinc to support our immune function. And that’s where we turn to our good old pal Mr Pumpkin Seed.
These potentially undervalued kings of the seed world are an absolute bounty when it comes to zinc & so in addition to pretty much finishing every dish I make with a sprinkle of them I also adore this simple seed butter as a topping for toast, to add to a warming bowl of porridge, or on occasion, to be had straight off the spoon as an incredibly speedy snack.
I adore their slight bitterness & will just use them by themselves, however I do find that the creaminess of the omega 3 rich hemp seeds just elevates this silky wonder to an entirely new level, hence why I choose to combine them. This also then adds a whole new level of wonderful nourishment to each spoonful, & that is something I will never turn down!
Makes 1 jar
- 1 1/2 cups raw pumpkin seeds
- 1/2 cup hulled hemp seeds
- Simply add to a food processor & blend until silky smooth, you may have to scrape down the sides a few times.
- Decant to a jar with a tight fitting lid, store somewhere cool & away from direct sunlight. Use within 2 months.
