No complicated pastry making here. These speedy veggie quiches are super-simple to make — the crust is gluten & dairy free & can be filled with whatever you fancy!
Preheat your oven to 180C & line a dish with parchment. Mix the flax & water in a cup, leave to sit for 5 minutes.
Grind the oats & buckwheat to flours then add to a large bowl with the rest of the dry ingredients. Whisk the oil into the jellified flax then add to the dry bits.
Start to combine then add in the water until you have a sticky dough, once formed don’t over mix or it’ll become tough.
Use damp hands or a spatula to form your crust then bake for 15 minutes. Add your filling, return to the oven & cook for another 15 minutes until golden & firm. Cool or serve straight away!
