Ingredients

  • 1 large handful watercress
  • 1 cup thawed frozen peas
  • 1/2 large bunch of fresh mint
  • 1 tablespoon extra virgin olive oil
  • Salt & pepper to taste
  • Optional extras - boiled & cooled potatoes, 1/2 teaspoon ground cumin, 1/2 avocado, broth or stock

Preparation

Place all ingredients in a blender & blitz to your desired consistency.
