This spectacularly speedy bolognese is secretly hiding 5 portions of vegetables and not 1 of them is a tomato! Teamed with pasta, this genius recipe transforms a simple burgers & veg meal into a super satisfying, nutritious & altogether delicious bolognese for two.
Pre-heat your oven to 210C, roughly chop the vegetables quite small (except the broccoli) & roast for 10 minutes.
Meanwhile, cook your pasta as per packet instructions.
Heat a large frying pan on medium (my faithful Ninja Kitchen frying pan features here) & add your burgers. Use a wooden spoon to break up & brown the meat until crispy.
Take your vegetables out of the oven & blend with the bone broth. Pour into the pan, add the broccoli & cover with a lid for 2-3 minutes.
Drain your pasta, toss with the sauce & taste test for seasoning. Because the burgers are seasoned, I just added a little pepper because I like the kick of spice.
