Obscure and artisanal ingredients may be cool and claim to have incredible benefits but you know what actually makes the most brilliant meals? Using simple, natural ingredients that are local to you. Being able to make them in a practical amount of time and for a manageable cost. Sharing them with others, because everyone enjoys them and they just so happen to be healthy.
When I first started Natural Nourishment, I coined the phrase 'Making Every Mouthful Matter' and I stand by that mantra with every recipe I create. This recipe is no different.
Enjoy this delectable sauce atop some pasta or mashed potato.
Add lentils to a bowl, cover with boiling water & leave to one side.
Add the liver to a blender, purée until smooth.
Chop onions, carrots, celery & mushrooms into similar sized pieces, the smaller the better. Finely grate the garlic.
Heat a large sauté pan, add the beef & break up with a spoon. Let it brown then add the vegetables, cover with a lid & let soften for 8 minutes stirring occasionally. Then add the garlic & liver purée, mix through. Get it to a gentle simmer & add the tomatoes, tomato purée, herbs, broth & seasoning.
Drain & rinse the lentils, add these to the pan & cover with a lid. Simmer for 20 minutes.
Uncover & let reduce on a low simmer for 15-20 minutes until thickened. Taste & adjust seasoning as required.
Serve or cool & use within a week, or freeze for up to 3 months.
