This is a quick and healthy meal full of flavour and inspired by the classic dish, Shakshuka.
Preheat your oven to 190°C. (You could do thin in a pan on the stove too if you wish)
Add spinach to an ovenproof dish, toss with olives, tomatoes, peas, & sliced peppers.
Crack in the eggs, season with plenty of black pepper & a little salt.
Cover with a lid/baking tray & cook for around 10-12 minutes until the eggs are cooked through.
Serve with toast etc.
