These simple, gluten free pancakes, are packed full of protein and an ideal start to your day. Feel free to top with nuts, seeds, or choc chips.
Blend everything in a food processor until smooth (or you could mash banana & whisk together).
Add 1/4 cup of batter per pancake to a hot pan. Sprinkle over any add ins (squish them in a bit) & cook for 2-3 minutes until the edges start to crisp. Flip & cook for 1-2 minutes on the other side.
Serve, refrigerate or freeze.
