There is something more than magical about a perfectly ripe tomato, & what better way to celebrate than to centre a meal entirely around them!
Slice your tomatoes into 3-4 pieces, salt & press down into a hot pan. Cook for 2 mins (get your poached eggs going at the same time) & slice your onions.
Once the natural sugars have caramelised, carefully flip & turn the heat off (the pan will be hot enough to crisp the other side).
Transfer to plates, drizzle with the oil & top with your, onions, lots of pepper & nigella seeds.
