Olives, dates & capers? Yes please! One of my favourite recipes, this super simple one-pot chicken dish is bursting with flavour and requires virtually no effort at all.
Mix the marinade ingredients together & toss the chicken in it. Leave to sit for 30 minutes to 2 hours.
Preheat your oven to 180C, take a deep casserole dish & add the chicken & sauce before roughly chopping the dates & olives & mixing through. Bake for 35 minutes covered then 15 minutes uncovered until golden & crisp.
Serve accompanied by crisp lettuce tossed with peas, a squeeze of lemon, drizzle of tahini & sprinkle of nigella seeds.
