Crispy Rice Bites and Cucumber Salad

Crispy rice balls with mackerel, spring onions, and egg.

Ingredients

CRISPY RICE BITES

  • 1 cup cold cooked rice
  • 1 tin mackerel fillets (or your protein of choice)
  • 2 spring onions
  • 1 egg
  • salt & pepper

CUCUMBER SALAD

  • 2 small cucumbers
  • 1 carrot
  • 1 teaspoon salt & garlic powder
  • 1 tablespoon unroasted sesame oil
  • 1/2 tablespoon Nish (fish) sauce (I get mine from Sozye Foods)
  • Juice of 1/2 lemon.

Preparation

For the rice balls, mix everything together, form balls & then either air fry at 210°C for 16-18 minutess or bake in the oven for 18-20 minutess.

For the salad, smash the cucumbers, toss with salt & garlic powder, shave the carrot & add this with the rest of the ingredients to the bowl. Toss well.

Serve & enjoy! Both the rice balls & salad will keep in the fridge for 4 days.
