Oat Wraps

crispy gluten free oat crepes topped with avocado, greens, mushrooms & a runny fried egg

There’s something really lovely about a wrap & these throw together babies are a fantastic 1 to whip up in less than a jiffy.

They can be tailored to your preferred tastes, crisped to your desired level of textural tantalisation & generally customised as little or as much as you fancy.

Ingredients

  • 1/2 cup jumbo oats
  • 2 organic eggs or flax eggs (2 tablespoons ground flax + 6 tablespoons water, mix & leave to sit for 5 minutes)
  • Pinch salt
  • 1 teaspoon avocado/coconut oil or organic ghee
  • Optional – black pepper, chilli, nigella seeds, turmeric, cinnamon, vanilla

Preparation

Add your oats to a bowl, cover with 1 cup boiling water, mix, pop a lid on & leave to sit for 10 minutes.

Then beat in your eggs/flax eggs, seasoning & any flavours.

Warm a frying pan & add 1/2 the oil/ghee, melt it gently & pour in 1/2 your batter, smooth into a round & cook until firm enough to flip (~1-2 minutes).

Cook for a further minute until golden & crisp on both sides then serve with whatever you want!.

They’ll keep in the fridge for 3 days easily.
