This one pan wonder is literally jam packed with veggies, protein & lovely slow burning carbs. It tastes epic & is literally ready from fridge to fork in 40 minutes which includes chopping all your veg!
Add everything to a large shallow pan which has a tight fitting lid.
Mix well, bring to a simmer & cook for 30-35 minutes until the pasta is cooked through.
Leave covered with the heat off for 10 minutes to steam. Then use forks to shred the chicken, add lemon juice, parsley, stir through & serve.
