Perfect Berry & Protein Porridge

Dark mornings call for cosy breakfasts. And this spin on a super comforting bowl of porridge is the perfect example of my ethos with food - When creating recipes I always ask myself ‘What is it about X that makes us want to eat it?'

Well for oats it’s their texture, the childhood nostalgia, the natural sweetness & cosiness on a cool morning & the fun had with choosing the toppings. That’s all great but if had in its classical unadulterated form then we are painting an unbalanced blood sugar scene for the rest of the day. So I take those critical points & simply use a few sneaky culinary tricks to cleverly rework the ingredients so all the emotional reward is there but so is the optimal nourishment.

Ingredients

  • 1/2 cup frozen berries or 1 small eating apple
  • 1.5 tablespoons of jumbo oats
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 3/4 cup milk of choice
  • 1 tablespoon freshly ground flaxseed or whole chia seeds
  • 35g bone broth powder (I get mine from Planet Paleo or you can use your protein powder of choice)
  • 1 heaped tablespoon coconut flour
  • 1 heaped tablespoon nut butter of choice or tahini

Preparation

Add berries/chopped & cored apple to a small pan with 2 tablespoons of water & a squeeze of fresh lemon juice. Cover with a lid & leave to simmer gently for 10 minutes. Stir occasionally & then mash with a wooden spoon.

Add the rest of the ingredients except the coconut flour & nut butter to another pan. Gently bring to a simmer & whisk together until smooth.

Once gently bubbling let it cook for about 5 minutes, then mix in the coconut flour. This will thicken it up to a porridge texture. Cook for 1 minute then decant to a bowl, top with your now lovely cooked fruit & chosen tahini/nut butter.
