Easy vegetable soup with chicken, greens, and grains

Have some leftover soup that could do with jazzing up? Think of this recipe as a 'formula' which can fit around what you have in your fridge.

Ingredients

  • 1 serving vegetable soup (homemade or buy a good quality prepared one)
  • 1 serving protein - cooked chicken, turley, tofu, or tempah
  • 2 big handfuls of leafy greens - spinach, chard, cabbage, watercress, rocket
  • 2 tablespoons cooked rice, quinoa, barley, chickpeas, or beans
  • Optional - nuts, seeds or cheese on top

Preparation

Add soup to a pan with your chosen protein and rice or quinoa etc. Pop the lid on & simmer gently for 6-7 minutes to warm through.

Add leafy greens, turn the heat off & let these wilt down in the residual heat of the soup.

Pour into a bowl & add nuts, seeds, or cheese if using.
