Have some leftover soup that could do with jazzing up? Think of this recipe as a 'formula' which can fit around what you have in your fridge.
Add soup to a pan with your chosen protein and rice or quinoa etc. Pop the lid on & simmer gently for 6-7 minutes to warm through.
Add leafy greens, turn the heat off & let these wilt down in the residual heat of the soup.
Pour into a bowl & add nuts, seeds, or cheese if using.
