RECIPE: Power Ranger Bars

Packed to the rafters with plant based protein, fibre & healthful fats these bars are the rocket fuel of the afternoon snack world. They also make a fabulous on the go breakfast or pre-workout snack.
- 250g walnuts
- 100g sunflower seeds
- 50g chia seeds
- 50g ground flaxseed
- 50g hemp seeds
- 100g cacao nibs
- 350g pitted soft dates
- 8 figs
- 100g raisins or prunes
- 2 tbsp apple puree
- 50g desiccated coconut
- optional: 2 tsp of lucuma or maca powder
- Measure out all your dry ingredients into a large bowl. Add ¾ of them to a food processor and pulse to combine.
- Roughly chop the pitted dates, figs and raisins then add to the processor with the apple puree and blend until a sticky dough is formed.
- Tip in the reserved 1/4 of the dry ingredients and quickly pulse a couple of times to combine but not blend smooth.
- Line a square dish or brownie tin with baking parchment, add the mix, press it down and smooth the top.
- Transfer to the fridge and chill for at least an hour.
- Use the parchment to pull the chilled mix out onto a cutting board and using a sharp knife slice into squares or your preferred shape.
- Store in an airtight container in the fridge for up to a week or bagged in the freezer for 2 months.
