Did you know that the more flavourful a food, the more nutrition it contains? It’s true! And this recipe is a beautiful example of taking a super familiar family favourite, switching things up just a tad & ending up with a supersonic symphony of deliciousness that also just happens to inundate your body with all the health enhancing goodies it wants!
Finely chop spring onions & coriander, whisk with the eggs & tamari/soy. Drench your bread in this lovely mix, leave to sit for 2-3 minutes.
Meanwhile heat a pan on a medium flame, add the bacon & leave to cook.
Halve the pak choi, rub the cut side with 1/2 teaspoon of sesame oil. Place cut side down into the pan with the bacon. Let this cook for 1 minute.
Slit the back of the pak choi & create a space in the centre for your bread slices. Add the remaining sesame oil & pop the bread on top. Let this cook gently for 3 minutes, once golden flip & cook for another 2-3 minutes until crispy on the second side.
Halve your cherry tomatoes, then simply plate up & dive in!
