This gut healing recipe is a perfect example of how we can eat in a therapeutically active way, whilst also just eating because something is delicious. Mushrooms are a functional & mucilaginous food, bone broth contains the key components for the intestinal wall, fennel decreases gas, & buckwheat is an easy to digest, naturally gluten free complex carb.
Finely slice leek, fennel, celery & mushrooms, add to a pan with a pinch of salt, plenty of pepper & a splash of water. Cover & steam sauté for 6-7 minutes stirring occasionally.
Rinse your buckwheat then add to the pan with the bone broth. Simmer gently for around 15-20 minutes until the liquid is mostly absorbed, then add your shredded cavallo nero & the nori torn into pieces. Mix them in, let them soften & you’re all set!
Test the seasoning, top with eggs & parsley & you’re good to go!
