Carrots are packed full of our good friend, Vitamin A. It's not actually a compound but a group of related molecules that are all classified under the 'A Team' umbrella.
When we eat a beta-carotene rich food like carrots or sweet potatoes, they are converted to retinol which the primary molecule in charge of the health of our retinas. From there the retinol becomes retinal which loves to hold hands with a protein called Opsin forming Rhodopsin (AKA visual purple) which is what allows us to see in the dark!
Top of list for optimising absorption is always pairing your vitamin A rich foods with a source of healthy fats. In this case we use our beloved hemp oil.
Preheat your oven to 190°C.
Wash & chop the carrots (don’t peel) & add to a roasting dish with the hemp oil, 1/2 cup water & pepper.
Cover & roast for 25mins then blend until smooth.
