This is a super simple and fun take on the classic Thai green curry with your protein of choice. Ready in a matter of minutes!
Soak noodles in hot water for 10 minutes.
In a small pan, add 3/4 cup of water, the coconut milk, curry paste, edamame, miso & 2 handfuls of stir fry vegetables. Bring to a boil then turn off the heat.
Add your protein of choice, cover & leave to sit until the noodles are ready.
Drain the noodles, mix into the broth, add lime, coriander, & serve.
