Tuna Melt Courgette Bites

Ingredients

  • 1 can wild caught tuna, mackerel or salmon
  • 1 teaspoon hummus
  • 2 tablespoons chopped dill
  • 5 quartered cherry tomatoes
  • 2 teaspoons capers
  • Salt & pepper
  • Garlic powder
  • Dried oregano
  • Nutritional yeast to taste
  • Optional - 1 heaped teaspoon soft goats/sheep cheese or parmesan to top & coconut bacon to serve

Preparation

Preheat your grill.

Mix fish with all other ingredients except the soft cheese & coconut bacon.

Slice your courgette into pieces & take out a little bit of the centre with a knife or spoon to create a gulley. Fill with your fish, add the cheese & grill for 5 minutes.
