A quick and easy mid-week meal that really hits the spot. I cook this one on a regular basis and it never disappoints.
Whisk eggs and cottage cheese/tofu.
Add veggies & rice into a pan with a splash or water and sesame oil to heat through for around 2 minutes.
Push the rice and veggies to one side. If there's leftover liquid let this steam off. Pour in the egg mix, scramble, then toss everything together.
Add lime juice & chilli flakes/coriander if using, & serve!
