Warm Butterbean & Tomato Toasts

Beautifully simple warm butterbean and roasted tomato on buckwheat toast.

Another beautifully basic recipe in celebration of all that is tomato. A simple toast recipe that really hits the spot.

Ingredients

  • 500g vine ripe tomatoes
  • 1/2 tablespoon avocado oil
  • 1 tin organic butter beans
  • 1/4 cup chicken broth
  • Lemon juice
  • 1 teaspoon cumin
  • Salt & pepper

Preparation

Toss your tomatoes with the oil, season & roast at 200°C for 10 minutes.

Meanwhile add the beans & broth to a blender, blitz then season, add cumin & lemon to taste.

Warm in a pan until just hot, toast up slices of your fave loaf (I’m using my homemade buckwheat bread) top with your warm purée & tumble on those tomatoes.

Plenty of extra black pepper & you are ready to rock.
