This a twist on the classic scrambled eggs and has all the added nutritional benefits to aid an excellent morning.
Whisk eggs, cottage cheese, seasoning & chopped herbs.
Add oil to a frying pan, heat on medium, then add the shredded kale with 2 tablespoons of water. Pop a lid on for 2 minutes. Then add egg mixture & scramble as you would regular eggs.
Serve with avocado, halved tomatoes, & toast (optional)
