This recipe is a winner every time as it’s just about honouring the ratios of the ingredients to each other so you don’t actually need anything specific except eggs.
1/3 cup cooked carb = 1 portion so scale as required.
For a bais combo, mix 1 cup of cooked carb (rice, buckwheat, quinoa, barley, potato, sweet potato, parsnip, carrots etc.
Coarsely grate or chop root veg) with 1/2 cup cooked protein, with around 1/2 cup softened veg & 1 egg. If you have leftover roasted mixed veg just chop these up small & use them!
Preheat your oven to 200°C.
Mix everything together well with your hands, these are the best tools & you’ll get everything well bound this way.
Pinch off a small amount, make a patty & press into a hot dry frying pan. Cook until golden then flip & seal on the other side.
Taste & check the seasoning & just ensure your mix holds together - if it falls apart add another egg.
Then form patties with the rest of the mix, seal in your hot pan before transferring to a lined baking sheet & cooking for 10-12 minutes until hot through.
Serve with steamed greens or a big salad, or leave to cool & then pop in the fridge for use within a week.
If using rice you must ALWAYS either eat cold or reheat through fully before serving.
