This breakfast recipe is packed full of protein and will keep you fuelled all morning.
Preheat your oven to 200°C.
Add tomatoes, sliced pepper, onion, sun-dried tomatoes & seasoning to a casserole dish. Roast for 15 minutes.
Use a wooden spoon to lightly squish the softened vegetables.
Roast for 20 minutes, stirring halfway through.
Crumble your cheese of choice on top & cook for a final 5-6 minutes until melted.
