Fats are friends, fats are fantastic, fats are literally the underlying functional food for our nervous & endocrine systems. But their chemical structure also makes them vulnerable to oxidation when exposed to heat which means that those fats become pro-oxidative in the body and we have to quench that with antioxidants & overtime this can be ineffective and mean damage & disease.
So what we want to do is include whole food fats (e.g. eggs, avo, nuts, seeds, oily fish, grass fed meats & dairy) & then when it comes to oils keep these cold & add them at the point of serving. My steam fried eggs always get the ‘I can’t believe I haven’t been doing them like this forever’ from clients, & now you can try them too.
Preheat a dry frying pan until you can feel the warmth rising off it when you hold your hand about 5cm from the pan base.
Crack in your eggs, season them, cover with a lid & turn the heat to low. Cook for 60-90 seconds until the white is opaque but the yolk is still runny.
Serve as you wish! I like to have mine with avocado, mushrooms, and spinach.
