Tea Dyed Eggs

I think all natural foods have a beauty about them, but then of course we have the opportunity on occasion to make them even more aesthetically pleasing!

This recipe is not a style over substance situation however, the process of cooking the eggs in this way not only imparts incredible flavour but also acts as a way to preserve them, which is where we find the origins of this idea.

Ingredients

  • 4 large organic eggs
  • 2 oolong, black or earl grey tea bags (choose organic teas in unbleached bags)
  • 3 tablespoons tamari or soya sauce if not gluten free
  • 1 heaped teaspoon coconut sugar
  • 1 cinnamon stick + 1 star anise (not necessary but imparts great flavour)

Preparation

Add your eggs to a pan of cold water with enough liquid to cover them & have an extra inch above. Bring to the boil & cook for 8 mins.

Remove, run under cold water & leave to cool for 5 minutes. Add the other ingredients to your pan of water.

Grab your eggs & gently crack the shells by rolling/gently dropping them onto a hard surface. Don’t peel or remove the shells though.

Add back to the pan, cover & bring to a low simmer for 30 minutes then turn the heat off & leave to marinate for 6-8 hours at room temperature or put into the fridge overnight.

Then just peel & revel in their aromatic, delicious BEAUTY! Keep in the fridge & use within 5 days.
