Breakfast is hugely important, it sets you up for the whole day! You wouldn’t expect a car to run on empty so why should your body going without?

Busy lives however do mean that sitting down to something at home first thing isn’t always appropriate, so being a little organised (and I really do mean ‘a little’!) can make all the difference. Give yourself 10 minutes one evening and you can be sorted with satisfying, cost effective & balanced breakfasts for the whole week, sounds pretty good doesn’t it!

Ingredients

  • 1/2 cup rolled oats
  • 3/4 cup milk of choice
  • 1/4 cup frozen raspberries
  • 1/4 scoop protein powder (I use MACACHA vegan protein but if you tolerate dairy try an organic whey based protein such as Motion Nutrition or The Organic Protein Company is great)
  • 1-2 tablespoons organic peanut butter (or nut/seed butter of choice. I like Meridian Foods or Biona)


Preparation

Place the oats, protein powder and milk in a jar, mix well until thoroughly combined.

Add the raspberries and stir through to break them down slightly.

Leave in the fridge overnight to allow the oats to absorb the milk then top with the peanut butter in the morning before you head out for the day.

They will keep in the fridge for 4-5 days so double, triple or quadruple the quantities and be set with a great, grab and go breakfasts for the whole week. Vary the fruit & nut butters if you’re feeling adventurous 😀
